Ayam Kuning: A Flavorful Indonesian Yellow Chicken
Indulge in the rich, aromatic flavors of Ayam Kuning, a traditional Indonesian dish that combines tender chicken with a vibrant yellow spice blend. Perfect for lunch or dinner, this recipe will delight your taste buds with its blend of spices and the option to enjoy it crispy or as a tender stew. Here’s how to make it:
Ingredients:
- 1/2 kg chicken wings (Ayam Sayap Pentung)
For the Yellow Spice Blend (Bumbu Kuning):
- 3 cloves garlic
- 2-inch piece of turmeric (Kunyit)
- 1 stalk lemongrass (Sereh)
- 1-inch piece of ginger (Jahe)
- 1 1/2 teaspoons salt (Garam)
- 1 teaspoon chicken bouillon (Kaldu)
- 100 ml water (enough to submerge the chicken)
- Tamarind to taste (Sckpnya asem)
Instructions:
-
Clean the Chicken:
- Rinse the chicken wings thoroughly under cold water. Pat dry with paper towels.
-
Prepare the Yellow Spice Blend:
- Peel and chop the garlic, turmeric, and ginger. Cut the lemongrass into sections.
- Using a mortar and pestle or a blender, grind the garlic, turmeric, ginger, and lemongrass into a smooth paste.
-
Marinate the Chicken:
- In a large bowl, combine the ground spice paste with salt and chicken bouillon. Mix well.
- Add the chicken wings to the bowl and ensure they are thoroughly coated with the spice blend.
-
Cook the Chicken:
- Place the spiced chicken wings into a pot. Add enough water to cover the chicken.
- Simmer over low heat for about 30 minutes, or until the water has reduced and the chicken is tender.
-
Serve:
- The chicken can be served as is, directly from the pot for a juicy, flavorful dish. For a crispy variation, heat oil in a pan and fry the marinated chicken until golden and crispy.
-
Enjoy:
- Serve your Ayam Kuning hot, and savor the delicious blend of spices. This dish pairs wonderfully with steamed rice and a fresh vegetable side.
Bon appétit and happy cooking! Enjoy your flavorful Ayam Kuning, and don’t forget, crispy fried versions are always a hit for those who love their dishes extra crunchy.
