Diet Menu: Potato and Tamagoyaki Recipe

Ingredients

  • 1 medium-sized potato
  • 2 large eggs
  • 2 bird’s eye chilies
  • 2 stalks of green vegetables (such as spinach or kale)
  • 1 sausage
  • 3 tablespoons salt
  • 1 tablespoon dried oregano
  • 2 tablespoons black pepper
  • 2 tablespoons cooking oil or olive oil (for a diet-friendly option)

Instructions

Preparing the Potato:

  1. Peel and Slice: Begin by peeling the potato and slicing it into long, thin strips, similar to potato fries.
  2. Soak: Place the sliced potato in a bowl of clean water and let it soak for 5-10 minutes to remove excess starch.
  3. Cook: Bring a pot of water to a boil, adding 2 tablespoons of salt, 2 tablespoons of black pepper, and 1 tablespoon of dried oregano. Add the soaked potato slices to the boiling water.
  4. Simmer: Cook the potato slices over medium heat for 10-15 minutes, or until tender. Drain and set aside.

Preparing the Tamagoyaki (Japanese Rolled Omelet):

  1. Prepare Ingredients: Slice the sausage into thin rounds and finely chop the bird’s eye chilies. If you prefer vegetables, slice the green vegetables or carrots into thin, small pieces.
  2. Mix Eggs: In a bowl, crack and beat the eggs. Add the sliced sausage, chopped chilies, and vegetables to the beaten eggs. Mix well to combine all ingredients.
  3. Cook Tamagoyaki: Heat a non-stick pan over medium heat. Add a small amount of cooking oil or olive oil, ensuring the pan is lightly coated.
  4. Form the Omelet: Pour a portion of the egg mixture into the pan, spreading it evenly. Cook until the edges start to set but the center is still slightly runny.
  5. Roll: Gently roll the partially cooked omelet from one side of the pan to the other, creating a log shape. Push the rolled omelet to one side of the pan.
  6. Repeat: Add another portion of the egg mixture to the pan, lifting the previously rolled omelet to let the new mixture flow underneath. Cook until set, then roll again. Repeat this process until all the egg mixture is used up.
  7. Finish: Ensure each layer is cooked through and the tamagoyaki has a nice golden color.
