Kimchi Jeon (Korean Kimchi Pancake)

Ingredients:

  • 3 large eggs
  • 100 grams kimchi (or more, to taste)
  • 1 stalk green onion
  • Red chili pepper, to taste (optional, omit if serving to children)
  • Salt, to taste
  • Oil for frying

Instructions:

  1. Prepare the Ingredients:

    • Finely chop the green onion.
    • Cut the kimchi into bite-sized pieces, ensuring to select a halal variety if needed.
    • If using, slice the red chili pepper into thin rings.
  2. Mix the Batter:

    • In a mixing bowl, beat the eggs thoroughly.
    • Add the chopped green onion, a pinch of salt, and red chili pepper (if using). Mix well to combine.
  3. Incorporate the Kimchi:

    • Gently fold the cut kimchi into the egg mixture, ensuring even distribution.
  4. Cook the Pancake:

    • Heat a generous amount of oil in a skillet over low to medium heat.
    • Pour the kimchi mixture into the skillet, spreading it out evenly.
    • Cook until the edges start to turn golden brown and the pancake is mostly set, about 4-5 minutes.
    • Carefully flip the pancake over using a spatula and cook the other side until golden brown and crisp.
  5. Serve:

    • Transfer the Kimchi Jeon to a serving plate. Optionally, serve with a side of sambal sauce or sesame sauce for added flavor.
