Balado Ikan Pindang with Fried Eggs

Ingredients:

  • 3 pieces of salted pindang fish (pindang salem)
  • 2 eggs
  • For the Spice Paste:
    • 5 shallots
    • 4 cloves of garlic
    • 8 red chilies
    • 2 tomatoes
    • Salt to taste
    • Bouillon powder to taste
    • Soy sauce to taste
    • Sugar to taste
  • Cooking oil

Instructions:

  1. Prepare the Fish:

    • Clean the pindang fish thoroughly, removing any bones.
  2. Coat the Fish:

    • In a bowl, beat the eggs and season them with a bit of soy sauce.
    • Dip the pindang fish into the egg mixture, ensuring they are well-coated.
  3. Fry the Fish:

    • Heat oil in a frying pan over medium heat.
    • Fry the egg-coated fish until golden brown and crispy. Remove the fish and set aside on paper towels to drain excess oil.
  4. Make the Spice Paste:

    • Blend the shallots, garlic, red chilies, and tomatoes into a smooth paste.
  5. Cook the Spice Paste:

    • In the same pan used for frying, add a bit more oil if needed and sauté the spice paste until fragrant.
    • Add a splash of water to the pan, then season with salt, sugar, bouillon powder, and soy sauce. Stir well to combine.
  6. Combine Fish and Sauce:

    • Return the fried pindang fish to the pan with the sauce. Mix gently to coat the fish evenly with the spicy sauce.
  7. Finish and Serve:

    • Once the sauce has thickened and the flavors have melded, remove from heat.
