Balado Ikan Pindang with Fried Eggs
Ingredients:
- 3 pieces of salted pindang fish (pindang salem)
- 2 eggs
- For the Spice Paste:
- 5 shallots
- 4 cloves of garlic
- 8 red chilies
- 2 tomatoes
- Salt to taste
- Bouillon powder to taste
- Soy sauce to taste
- Sugar to taste
- Cooking oil

Prepare the Fish:
- Clean the pindang fish thoroughly, removing any bones.

Coat the Fish:
- In a bowl, beat the eggs and season them with a bit of soy sauce.
- Dip the pindang fish into the egg mixture, ensuring they are well-coated.

Fry the Fish:
- Heat oil in a frying pan over medium heat.
- Fry the egg-coated fish until golden brown and crispy. Remove the fish and set aside on paper towels to drain excess oil.

Make the Spice Paste:
- Blend the shallots, garlic, red chilies, and tomatoes into a smooth paste.

- In the same pan used for frying, add a bit more oil if needed and sauté the spice paste until fragrant.
- Add a splash of water to the pan, then season with salt, sugar, bouillon powder, and soy sauce. Stir well to combine.

- Return the fried pindang fish to the pan with the sauce. Mix gently to coat the fish evenly with the spicy sauce.

- Once the sauce has thickened and the flavors have melded, remove from heat.
