This Indonesian dish, Ikan Pindang Telur Balado, combines the rich flavors of fried fish and eggs with a spicy, aromatic sauce. Perfect for those who love bold flavors and traditional cuisine, this recipe is sure to delight with its savory and slightly sweet taste.

Ingredients:

  • 4 pieces of pindang fish (or other preferred fish)
  • 2 chicken eggs
  • 2 cloves garlic
  • 5 shallots
  • 4 bird’s eye chilies (adjust according to spice preference)
  • 6 curly red chilies (adjust according to spice preference)
  • 2 ripe tomatoes
  • Salt to taste
  • Granulated sugar to taste
  • Cooking oil

Instructions:

  1. Prepare the Eggs:

    • Boil the chicken eggs until fully cooked. Peel the eggs, cut them in half, and then fry them until golden brown. Set aside.
  2. Prepare the Fish:

    • Clean the fish thoroughly and fry them until they are half-cooked. They should be lightly crispy on the outside but not fully cooked. Set aside.
  3. Prepare the Spice Paste:

    • Heat a small amount of oil in a pan. Fry the shallots, garlic, bird’s eye chilies, curly red chilies, and ripe tomatoes until they are softened and fragrant.
  4. Make the Spice Paste:

    • Once the spices are fried, transfer them to a mortar and pestle or a blender and grind into a smooth paste.
  5. Cook the Spice Paste:

    • In the same pan, add a bit more oil if necessary and sauté the ground spice paste until it becomes fragrant and the color darkens slightly. Add granulated sugar and salt to taste, mixing well.
  6. Combine Ingredients:

    • Add the fried fish and eggs to the pan with the spice paste. Stir gently to coat the fish and eggs with the sauce.
  7. Adjust Seasoning:

    • Taste the dish and adjust the seasoning with additional salt or sugar if needed.
  8. Serve:

    • Once everything is well-mixed and the flavors have melded together, remove from heat and transfer to a serving dish. Serve warm and enjoy!

This Ikan Pindang Telur Balado is a flavorful and satisfying dish that pairs wonderfully with steamed rice. Its combination of spicy, savory, and slightly sweet elements makes it a delightful addition to any meal.
