This Kedgeree recipe, inspired by a delightful breakfast I enjoyed in Ireland, offers a modern take on a classic dish traditionally made with smoked haddock. While I’ve kept the essential butter, reducing the quantity to make it a bit lighter, I’ve swapped out the cream for fat-free half & half. Ingredients:

- 1 tablespoon butter
- 8 ounces smoked salmon (or Finnan haddie, if you can find it)
- 2 hard-boiled eggs, chopped

- 3/4 cup fat-free half & half
