This Kedgeree recipe, inspired by a delightful breakfast I enjoyed in Ireland, offers a modern take on a classic dish traditionally made with smoked haddock. While I’ve kept the essential butter, reducing the quantity to make it a bit lighter, I’ve swapped out the cream for fat-free half & half. The result is a scrumptious dish that’s perfect for any meal of the day. To round out your meal, serve it with some crusty bread and a fresh salad.

Ingredients:

  • 1 cup long grain rice
  • 1 tablespoon butter
  • 8 ounces smoked salmon (or Finnan haddie, if you can find it)
  • 2 hard-boiled eggs, chopped
  • 1/4 teaspoon nutmeg
  • 3/4 cup fat-free half & half
  • Fresh parsley, finely chopped, for garnish

Instructions:

  1. Poach the Salmon: Begin by covering the smoked salmon with water in a medium saucepan. Gently poach the salmon over medium heat, turning once, until it starts to flake. This should take about 10 minutes. Remove the salmon from the poaching liquid, reserving the liquid for later use. Once cool enough to handle, flake the salmon into bite-sized pieces with a fork.

  2. Cook the Rice: While the salmon is poaching, prepare the rice according to package instructions. Set aside once cooked.

  3. Sauté the Salmon: In a large skillet, melt the butter over medium heat. Add the flaked salmon to the skillet and stir gently for a few minutes to allow the flavors to meld.

  4. Combine Ingredients: Mix the cooked rice into the skillet with the salmon. Stir until well combined and heated through.

  5. Prepare the Half & Half Mixture: In separate bowls, divide the fat-free half & half evenly. Add a small pinch of nutmeg to each bowl, then pour in 1/4 cup of the reserved poaching liquid.

  6. Assemble and Serve: Spoon the hot rice and salmon mixture into serving bowls. Top each serving with chopped hard-boiled eggs and a sprinkle of minced parsley. Serve immediately.
