Spicy Crispy Fried Chicken (Ayam Geprek Level Pedas)

Ingredients:

  • 4 chicken thigh pieces
  • All-purpose flour
  • Ground black pepper
  • Royco seasoning mix
  • 17 bird’s eye chilies
  • 4 cloves garlic
  • ½ tablespoon granulated sugar

Instructions:

  1. Prepare the Coatings: Start by setting up two separate bowls for the coating. In one bowl, prepare the dry coating by mixing all-purpose flour with ground black pepper and Royco seasoning. In the other bowl, prepare the wet coating by combining all-purpose flour with ground black pepper, Royco seasoning, and enough water to create a batter.

  2. Coat the Chicken: Dip each chicken thigh piece into the wet batter, ensuring it is fully coated. Next, dredge the chicken in the dry flour mixture. Repeat the process by dipping the chicken back into the wet batter and then into the dry flour mixture for an extra crispy coating.

  3. Fry the Chicken: Heat oil in a pan over low heat. If you haven’t pre-cooked the chicken, frying at a lower temperature ensures that the chicken cooks through evenly. Carefully place the coated chicken pieces into the hot oil and fry until golden brown and crispy, turning occasionally to ensure even cooking. Once cooked, remove the chicken and drain on paper towels.

  4. Prepare the Spicy Sambal: While the chicken is frying, prepare the sambal. In a mortar and pestle or a food processor, crush 4 cloves of garlic with Royco seasoning and salt. Add the bird’s eye chilies and continue to crush until the mixture is well combined and forms a chunky paste.

  5. Combine and Serve: Once the chicken is crispy and golden brown, transfer it to the bowl with the sambal. Gently smash and mix the chicken with the sambal until it is well coated and the flavors are combined.

  6. Serve: Serve the spicy crispy fried chicken hot with steamed rice for a delicious meal. Enjoy the crispy texture and intense spiciness of this Indonesian classic!

This recipe brings together the satisfying crunch of fried chicken with a fiery sambal, perfect for those who love their food with an extra kick.
