Simple Soy Sauce Potatoes and Eggs (Kentang Telor Kecap)

Ingredients:

  • 5 fried sunny-side-up eggs
  • 250 grams potatoes, cut into large chunks and fried
  • Sweet soy sauce (kecap manis), to taste
  • Salt, sugar, and pepper, to taste
  • 1 onion, finely chopped
  • 2 shallots, finely chopped
  • 4 cloves garlic, finely chopped
  • 1-2 green onions, sliced (for garnish)
  • Red or bird’s eye chilies, sliced (adjust quantity based on desired spiciness)
  • Water, as needed

Instructions:

  1. Prepare the Aromatics:
    Heat a small amount of oil in a pan. Sauté the finely chopped onion, shallots, and garlic in the oil until fragrant and golden brown.

  2. Combine Ingredients:
    Add the fried potatoes and eggs to the pan with the sautéed aromatics. Stir well to combine. Pour in a small amount of water, enough to help mix the ingredients together without making the dish too watery.
