Chicken Soup Recipe

Ingredients:

  • 1 chicken wing, cleaned and cut into small pieces
  • 1/2 chicken breast, diced
  • 1/2 onion, thinly sliced
  • 1 stalk leek, thinly sliced
  • 6 green beans, cut into small pieces
  • 1 carrot, halved and sliced
  • 1 potato, peeled and diced
  • 1 clove garlic, finely chopped
  • Salt, to taste
  • Chicken seasoning (like Royco), to taste
  • 1 tablespoon margarine
  • Sufficient water

Instructions:

  1. Prepare the Aromatics: Heat a non-stick pan over medium heat and melt the margarine. Add the garlic first and sauté until fragrant. Next, add the sliced onion and cook until translucent. Follow with the leek and continue to sauté until the vegetables are tender and aromatic.

  2. Cook the Chicken: Add the chicken pieces to the pan. Stir well to combine with the sautéed aromatics and cook until the chicken is browned and nearly cooked through.

  3. Add Liquid: Pour in enough water to cover the chicken. Season with salt and chicken seasoning (such as Royco). Bring to a gentle boil, then reduce the heat and cover the pan. Let it simmer.

  4. Prepare the Vegetables: In a separate pot, bring water to a boil. Add the diced potato and carrot, cooking for about 5-6 minutes. Then add the green beans and cook for another 1-2 minutes. Drain the vegetables and set aside.

  5. Combine and Adjust: Add the cooked vegetables to the chicken and aromatic mixture. Taste and adjust seasoning if needed. Add more salt or chicken seasoning as preferred, but be mindful of the amount of seasoning as the chicken already adds some flavor.

  6. Finish and Serve: Allow the soup to simmer for a few more minutes to blend the flavors. Serve hot, garnished with fresh herbs if desired.
