Telur Ceplok Balado Sumatra Recipe

Ingredients:

  • 4 large eggs
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon seasoning (optional, adjust to taste)
  • 1 teaspoon salt
  • 1/2 teaspoon granulated sugar (optional, based on personal preference)

For the Spice Paste:

  • 11 bird’s eye chilies (or red bell peppers if preferred)
  • 2 shallots
  • 2 cloves garlic
  • 1 thumb-sized piece of ginger
  • 1 thumb-sized piece of galangal (galangal adds fragrance to the dish)
  • 1 kaffir lime leaf (optional; omit if not available)

Instructions:

  1. Prepare the Eggs: Heat the vegetable oil in a skillet over medium heat. Fry the eggs until the whites are crispy and the yolks are cooked to your liking. If you prefer, you can opt to scramble the eggs instead of frying them. Set the eggs aside.

  2. Make the Spice Paste: In a blender or food processor, combine the bird’s eye chilies, shallots, garlic, ginger, galangal, and kaffir lime leaf. Blend until the mixture forms a smooth paste.

  3. Cook the Spice Paste: Heat a small amount of oil in a pan over medium heat. Add the spice paste and sauté until fragrant. The paste is ready when it emits a pleasant aroma. Cooking the paste thoroughly helps prevent the dish from spoiling quickly.

  4. Season the Paste: Add the salt, seasoning, and sugar (if using) to the spice paste. Stir well to incorporate the flavors. If you like, you can add a small amount of water to adjust the consistency, though the tomatoes in the paste may be sufficient.

  5. Combine the Ingredients: Lower the heat and gently add the fried eggs to the pan with the spice paste. Stir the eggs gently with the paste to coat them without breaking them apart. Be careful to keep the eggs intact to ensure an appealing presentation.

  6. Adjust Seasoning: Taste the dish and adjust the seasoning if necessary. Once the flavors are well-balanced, remove the pan from heat.

  7. Serve: Transfer the eggs to a serving plate. Enjoy this dish with warm rice for a satisfying meal.

This Telur Ceplok Balado Sumatra combines the rich, spicy flavors of Sumatra with the comforting texture of fried eggs. Serve it with steamed rice for a delicious and hearty meal that’s sure to impress your family and friends.
