Udang Telur Balado (Spicy Shrimp and Egg)

Ingredients

  • 1/4 kg shrimp, peeled and cleaned
  • 1 egg

Ground Spice Paste:

  • 10 curly red chilies
  • 4 shallots
  • 2 cloves garlic
  • Sufficient amount of candlenuts
  • 4 bird’s eye chilies
  • 1 small tomato
  • Salt to taste
  • Sugar to taste
  • Pepper to taste
  • Ginger to taste
  • Galangal to taste

Steps

  1. Prepare the Shrimp:

    • Begin by thoroughly washing the shrimp. Peel and clean them, ensuring all the shells are removed.
  2. Make the Spice Paste:

    • Using a mortar and pestle, grind the curly red chilies, shallots, garlic, candlenuts, bird’s eye chilies, and tomato into a fine paste.
    • Set aside the ginger and galangal, as these will only be bruised, not ground.
  3. Cook the Spice Paste:

    • Heat a generous amount of oil in a pan over medium heat.
    • Add the ground spice paste to the pan and sauté until it becomes fragrant and the oil separates from the paste, indicating that it is cooked.
  4. Add the Egg:

    • Crack the egg into the pan with the spice paste and stir continuously to scramble it, ensuring it is well incorporated with the spices.
  5. Incorporate Ginger and Galangal:

    • Lightly bruise the ginger and galangal to release their flavors and add them to the pan.
  6. Cook the Shrimp:

    • Add the cleaned shrimp to the pan, stirring to coat them thoroughly with the spice mixture.
    • Cook until the shrimp turn pink and are cooked through.
  7. Season to Taste:

    • Add sugar, salt, and pepper to the dish, adjusting the flavors to your preference. Ensure the balance between sweet, salty, and spicy is to your liking.
  8. Serve:

    • Remove the ginger and galangal before serving.
    • Transfer the dish to a serving plate and enjoy it while hot.

This dish, Udang Telur Balado, is a perfect combination of succulent shrimp and scrambled egg, all enveloped in a rich, aromatic, and spicy sauce. It’s a delightful dish that brings the vibrant flavors of Indonesian cuisine to your table. Serve it with steamed rice for a complete and satisfying meal.
