Ingredients:
- 1/2 chicken (cut into pieces)
- For the Spice Paste:
- 12 red chilies
- 12 bird’s eye chilies (adjust to taste)
- 5 shallots
- 3 cloves garlic
- A small piece of turmeric
- 1 cm ginger

- 2 kaffir lime leaves
- 2 bay leaves
- 1 stalk lemongrass (smashed)
- 1 piece galangal (smashed)
- Salt to taste
- Sugar (about 3 tablespoons, adjust to taste)
- 1 teaspoon oyster sauce
- Water as needed
- Chicken bouillon powder to taste
- Black pepper to taste
- Juice of 1/2 lime
- 1/2 onion, sliced

- Wash the chicken pieces thoroughly. Rub with salt, chicken bouillon powder, and black pepper. Set aside.
