- 6 tablespoons unsalted butter
- 1 pound chorizo sausage
- 1 1/2 pounds hot sausage
- 1 yellow onion, diced
- 1/2 red bell pepper, diced
- 4 cloves garlic, minced
- 4 teaspoons chili powder
- 5 flour tortillas
- 10 large eggs
- 5 cups half-and-half
- 3 teaspoons salt
- 1/2 teaspoon fresh ground black pepper
- 1/2 cup green onion, chopped
- 1/2 cup fresh cilantro, chopped
- 1 1/2 cups Monterey Jack pepper cheese, shredded
- 1 1/2 cups medium cheddar, shredded
- Salsa, for serving

Note: This recipe requires at least six hours of refrigeration before baking.

Preheat the Oven:
- Preheat your oven to 350°F (175°C).

Roast the Peppers:
- Place the red bell peppers on an open gas flame, turning them frequently with tongs until all sides are charred black, about 7 to 10 minutes.
- Alternatively, you can roast the peppers under a broiler or on top of a gas or charcoal grill.
- Once charred, place the peppers in a bowl and cover with plastic wrap. Let them rest until cool enough to handle, about 15 minutes.
- Peel the peppers, split them in half lengthwise, and remove the seeds and stems.

Prepare the Baking Dish:
- Grease a 9 x 13-inch baking dish with 1 teaspoon of butter.
- Spread the roasted chilis in a flat layer across the bottom of the dish.

Cook the Sausage Mixture:
- In a large skillet, cook the chorizo and hot sausage over medium-high heat, stirring to break up the meat, until browned.
- Add the onions and bell peppers, and cook, stirring, for 4 minutes.
- Add the garlic and chili powder, and cook, stirring, for 1 minute.
- Remove from the heat.

Prepare the Tortillas:
- In a separate skillet, heat 1 teaspoon of the vegetable oil over medium-high heat.
- Add one tortilla and cook until softened, about 30 seconds per side.
- Remove from the pan and cut into quarters.
- Repeat with the remaining oil and tortillas.

Prepare the Egg Mixture:
- In a large bowl, combine the eggs, half-and-half, hot sauce, salt, and black pepper.
- Whisk to combine.

Prepare the Cheese Mixture:
- In a medium bowl, combine the green onions, cilantro, Monterey Jack pepper cheese, and medium cheddar.
- Mix well.

Assemble the Bake:
- Spoon 1/3 of the sausage mixture over the chilis in the baking dish.
- Top with 1/3 of the tortilla quarters, and 1/3 of the cheese mixture.
- Repeat the layering process, ending with a cheese layer.
- Pour the egg mixture over the layered ingredients.
- Cover and let rest in the refrigerator for at least 6 hours or overnight.

Bake the Dish:
- Bake in the preheated oven until bubbly and golden brown, and a knife inserted into the custard comes out clean, about 1 hour and 10 minutes.

- Remove from the oven and let rest for 10 minutes before serving.
