Semur Bali Tahu and Eggs
Ingredients:
- 4 large eggs
- 2 large blocks of tofu, cut into small triangles
- 1 small piece of palm sugar (gula merah)
- Sweet soy sauce (kecap manis) to taste
- 2 bay leaves (daun salam)
- Salt and sugar to taste
- Royco seasoning or equivalent
- Blended Ingredients:
- 5 large red chilies
- 4 shallots
- 6 cloves of garlic
- 1 thumb-sized piece of ginger
- 2 candlenuts (kemiri)
- A small tomato, chopped
Steps:

Prepare the Eggs and Tofu:
- Boil the eggs until fully cooked. Once done, drain and set aside.
- Cut the tofu into small triangle pieces and drain well.

Fry the Tofu and Eggs (Optional):
- Heat some oil in a pan and lightly fry the tofu until it’s halfway cooked.
- (Note: Frying the eggs is optional; if you prefer, you can skip this step and proceed with the next one.)

Blend the Ingredients:
- In a blender, combine the red chilies, shallots, garlic, ginger, candlenuts, and tomato. Blend until smooth.

Cook the Spice Mixture:
- In the same pan used for frying, heat some oil and add the blended spice mixture.
- Cook until the mixture is fragrant and the oil starts to separate from the spice paste.

Add Seasonings and Ingredients:
- Add the bay leaves to the spice mixture.
- Season with Royco, sugar, salt, and sweet soy sauce to taste.
- Stir in the palm sugar and mix until it’s well incorporated.

Combine and Simmer:
- Add the fried tofu and eggs to the pan. Stir gently to coat them with the spice mixture.
- Pour in about a cup of water. Bring to a gentle simmer.
- Allow the dish to cook until the water reduces and the sauce thickens, letting the flavors meld together.

Serve:
- Once the sauce has reduced to your desired consistency, remove from heat.
- Serve warm with steamed rice or as a side dish.
