Sambal Terong Asam Telur

Ingredients:

  • 1 medium-sized eggplant, peeled and diced into small cubes
  • 5 shallots, peeled
  • 2 cloves garlic, peeled
  • 10 red chilies (adjust to your spice preference)
  • 2 eggs
  • Salt, to taste
  • Palm sugar or granulated sugar, to taste
  • 1/2 sachet of ABC shrimp paste (terasi)
  • Soy sauce, to taste

Instructions:

  1. Prepare the Ingredients: Start by gathering all your ingredients and preparing your kitchen workspace. Wash the eggplant thoroughly, peel it, and cut it into small, even cubes. Set aside.

  2. Make the Spice Paste: In a mortar and pestle or a food processor, combine the shallots, garlic, red chilies, and shrimp paste. Grind or blend these ingredients into a smooth, cohesive paste.

  3. Combine Eggplant and Spice Paste: Add the diced eggplant to the spice paste. Using the pestle, mix the eggplant with the paste, gently mashing the eggplant to ensure it is well-coated with the spice mixture.
