Tahu Aci: Indonesian Fried Tofu and Tapioca Delight
Ingredients:
- 2 blocks of white tofu (cut into small cubes)
- 1/2 head of cabbage
- 7 tablespoons tapioca flour
- 4 tablespoons all-purpose flour
- 2 stalks green onions (sliced)
- 2 tablespoons fresh celery leaves (chopped)
- 1 seasoning packet (e.g., Masako)
- To taste: Ladaku seasoning (or any preferred chili seasoning)
- A pinch of salt
- Water (as needed)

Prepare the Tofu and Cabbage:
- Cut the tofu into small cubes according to your preference. Heat oil in a pan and fry the tofu cubes until they are golden brown and crispy. Once fried, set them aside to drain excess oil.
- Shred the cabbage and soak it in hot water to soften. After soaking, drain and set aside.

Mix the Flour Batter:
- In a large mixing bowl, combine the tapioca flour and all-purpose flour. Add the sliced green onions, chopped celery leaves, seasoning packet, Ladaku seasoning, and a pinch of salt. Mix well to distribute the ingredients evenly.

- Gradually add water to the flour mixture, stirring continuously, until the batter reaches a slightly thick but pourable consistency. The batter should be smooth and not too thick or too runny.

Combine Tofu and Cabbage:
- Gently fold the crispy tofu cubes and softened cabbage into the batter, ensuring they are well coated.

Steam the Mixture:
- Pour the tofu and cabbage mixture into a steaming tray or heatproof dish. Place it in a steamer and steam for approximately 15 minutes, or until the batter is cooked through and has a firm texture.

- Once steamed, allow the Tahu Aci to cool slightly before serving. It pairs wonderfully with spicy sambal sauce for dipping.
