  • Coconut Milk: 250 ml
  • Salt: to taste
  • Sugar: to taste
  • Seasoning Powder: to taste
  • Cooking Oil: for frying
  • Ground Spice Blend:
    • Shallots: 3 cloves
    • Garlic: 3 cloves
    • Chili Peppers: to taste
    • Turmeric: 3 cm piece
    • Ginger: 3 cm piece
    • Coriander Seeds: 1 teaspoon
    • Candlenuts: 3 pieces
    • Shrimp Paste: 1 teaspoon
  • Additional Aromatics:
    • Bay Leaves: 2
    • Kaffir Lime Leaves: 2
    • Galangal: 2 cm piece

Steps:

  1. Prepare Tempeh and Tofu:

    • Heat oil in a frying pan over medium heat. Fry the tempeh and tofu pieces until they are lightly golden and halfway cooked. Remove from the pan and set aside.
  2. Make the Spice Paste:

    • Using a mortar and pestle or a food processor, grind together the shallots, garlic, chili peppers, turmeric, ginger, coriander seeds, candlenuts, and shrimp paste until you achieve a smooth paste.

  5. Simmer with Liquid:

    • Pour in enough water to cover the ingredients. Allow it to simmer until the flavors meld and the mixture thickens slightly.

    • Adjust the seasoning by adding salt, sugar, and seasoning powder according to your taste preferences.
  7. Incorporate Coconut Milk:

    • Stir in the coconut milk and bring the mixture to a gentle boil.
