Stir-Fried Mustard Greens with Egg (Orak Arik Telur)

A delightful and flavorful dish, Orak Arik Telur combines fresh vegetables with egg, creating a satisfying and nutritious meal. This Indonesian-inspired recipe is perfect for a quick weeknight dinner or a flavorful addition to any meal.

Ingredients

  • 1/2 bunch mustard greens (sawi), cleaned and chopped
  • 1 carrot, peeled and sliced
  • 1 egg, beaten
  • 3 chili peppers, sliced (adjust to taste)
  • 3 cloves garlic, minced
  • Fried shallots, for garnish
  • Salt, to taste
  • Ladaku (or all-purpose seasoning), to taste

Instructions

  1. Sauté Aromatics: Heat a pan over medium heat and add a bit of oil. Sauté the minced garlic and sliced chili peppers until fragrant and slightly golden.

  2. Add Water: Pour in enough water to cover the vegetables and bring it to a boil.

  3. Cook Carrots: Add the sliced carrots to the pan and cook for about 2 minutes, or until they start to soften.

  4. Add Mustard Greens: Stir in the chopped mustard greens and cook until they are wilted and tender.

  5. Season: Add salt and Ladaku (or your preferred seasoning) to taste. Mix well.

  6. Add Egg: Pour the beaten egg over the vegetables. Allow it to sit undisturbed for a few moments until it starts to set. Then, gently stir the mixture to incorporate the egg.

  7. Adjust Seasoning: Taste and adjust the seasoning if necessary.

  8. Garnish and Serve: Sprinkle fried shallots on top before serving for an extra crunch and flavor.
