Special Stir-Fried Eggs with Mushrooms
Ingredients:

- 3 cloves garlic, finely chopped
- A piece of ginger (about 2 cm), smashed
- 1 red chili pepper, seeds removed and sliced diagonally
- 5 red bird’s eye chilies, finely sliced
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- 1 teaspoon five-spice powder (optional)
- 1 egg, beaten
- 2 tablespoons sliced French mushrooms
- Salt, sugar, and pepper, to taste
- A splash of water
Instructions:

Heat a pan over medium heat and add a little oil. Sauté the garlic, ginger, and both types of chilies until fragrant.

Pour in the beaten egg and let it sit undisturbed until it starts to set, then stir to scramble.

Add the sliced mushrooms, soy sauce, oyster sauce, sesame oil, and five-spice powder (if using). Season with pepper, and a touch of sugar and salt to taste. (Note: You might not need additional salt if your oyster sauce is already salty.)

Pour in a splash of water to help create a bit of sauce and cook until everything is well combined and the mushrooms are tender.
