  • Bean Sprouts (Tauge): 100 grams, rinsed
  • Salt: 1 teaspoon, or to taste
  • Sugar: 1 teaspoon, or to taste
  • Masako Seasoning: 1 teaspoon, or to taste
  • Garlic: 3 cloves, finely chopped
  • Shallots: 3 cloves, finely chopped
  • Cooking Oil: 2 tablespoons
  • Firm Tofu: 1 block (about 200 grams), cubed

Instructions:

  1. Prepare the Vegetables:

    • Begin by cutting the green beans and carrots into your preferred sizes. Rinse all vegetables, including the bean sprouts, under cold water until clean.
    • Set aside the prepared vegetables.
  2. Prepare the Tofu:

    • Rinse the tofu block and pat it dry with paper towels. Crumble or mash the tofu into small pieces and mix with a bit of Masako seasoning. Set aside.
  3. Cook the Aromatics:

    • Heat the cooking oil in a large skillet or wok over medium heat. Add the chopped shallots and garlic, sautéing until fragrant and golden brown.

  5. Add the Vegetables:

    • Toss in the carrots and green beans, stirring frequently. Cook for about 5 minutes, or until the vegetables start to soften.
  6. Combine Ingredients:

    • Stir in the bean sprouts and add a splash of water if needed to help with cooking. Mix thoroughly.
    • Add the seasoned tofu and gently fold it into the vegetable mixture. Continue to cook for another 5 minutes, allowing the flavors to meld and the tofu to heat through.
  7. Finish Cooking:

    • Cover the skillet and let the vegetables cook until they are tender and the water has mostly evaporated. This should take about 5-7 minutes.
  8. Serve:

    • Once the dish is well-cooked and the flavors are fully integrated, transfer it to a serving dish.
