Tahu Telur Kubis Bumbu Kecap: A Delightful Indonesian Stir-Fry

Ingredients:

  • 1 block of firm tofu
  • 3 large eggs
  • 1 handful of cabbage, thinly sliced

  • Salt, sugar, ground black pepper, and seasoning (to taste)
  • Sweet soy sauce (kecap manis)

Instructions:

    • Slice the red chili pepper into thin rings, and leave the Thai bird chilies whole.
  2. Fry the Tofu and Eggs:

    • Cut the tofu into bite-sized pieces according to your preference. Heat oil in a pan and fry the tofu pieces until golden and crispy. Remove and drain on paper towels.
    • In the same pan, fry the eggs one by one until they reach your desired doneness, preferably sunny-side up.
  3. Cook the Vegetables and Aromatics:

    • In a separate pan, heat a bit of oil and sauté the chopped garlic and shallots until they become fragrant and translucent.
    • Add the sliced red chili and whole Thai bird chilies to the pan, continuing to stir until the spices release their aroma.

    • Add the thinly sliced cabbage to the pan with the aromatics and cook until it begins to soften.
    • Gently fold in the fried tofu and eggs, mixing well to combine all the ingredients.
  5. Add Flavor and Finish:

    • Pour in a small amount of water and the sweet soy sauce (kecap manis) to create a rich sauce.
    • Season with salt, sugar, ground black pepper, and additional seasoning to taste. Stir everything together and let it simmer for a few minutes to ensure the flavors meld together.
  6. Adjust and Serve:

    • Taste and adjust the seasoning as needed. Once everything is well-coated and the cabbage is tender, remove from heat.
