Description: This delightful Pasta Twists With Tomato and Mozzarella recipe is a charming dish that I’ve adopted, inspired by one of the first recipes I learned to make when I first got married. It’s a classic from a Sunset collection, and it’s as delicious as it is straightforward.

Ingredients:

  • 1/4 cup olive oil 🫒
  • 3 garlic cloves, minced 🧄
  • 1 can (14.5 oz) Italian-style tomatoes 🍅
  • 1/4 cup dried oregano leaves 🌿
  • 1/4 cup dry red wine 🍷
  • 1/2 teaspoon salt 🧂
  • 1/4 teaspoon black pepper 🌶️
  • 1/4 cup fresh basil leaves, chopped 🌱
  • 1/2 teaspoon dried basil 🌿
  • 1 pound rotelle pasta 🍝
  • 1 cup mozzarella cheese, shredded 🧀
  • 1/4 cup Parmesan cheese, grated 🧀

Instructions:

  1. Prepare the Sauce: Heat the olive oil in a medium-sized frying pan over medium heat. Add the minced garlic cloves and cook them gently, stirring frequently until they turn a pale golden brown, releasing their aromatic flavors. Be careful not to let the garlic burn. Once the garlic is golden, remove it from the pan and discard it, leaving behind the infused oil.

  2. Create the Tomato Sauce: In the same pan, add the Italian-style tomatoes along with their juices. Use a spoon to break up the tomatoes into smaller pieces. Stir in the dried oregano, dry red wine, salt, black pepper, and chopped fresh basil. Adjust the heat to ensure the mixture boils gently. Allow the sauce to cook uncovered, stirring occasionally until it thickens lightly, which should take about 15 to 20 minutes.

  3. Cook the Pasta: While the tomato sauce is simmering, bring a large pot of salted water to a boil. Add the rotelle pasta and cook according to the package instructions until it is al dente. Once cooked, drain the pasta well and transfer it to a warm serving bowl.

  4. Combine and Serve: Gently mix the cooked pasta with the shredded mozzarella cheese while it is still warm. The heat from the pasta will help melt the cheese slightly, making it wonderfully gooey. Spoon the rich tomato sauce over the pasta, allowing it to cover the spirals evenly. Sprinkle the grated Parmesan cheese on top for an extra touch of flavor and richness.

  5. Enjoy: Serve your Pasta Twists With Tomato and Mozzarella with a side of French bread to complete the meal. This comforting dish is perfect for a cozy dinner and is sure to be a hit with family and friends.
