Sate Tahu & Tempe (Grilled Tofu and Tempeh Skewers)
Ingredients:
- 2 blocks of white tofu
- 1/3 large block of tempeh
- 1 thumb-sized piece of galangal
- 1 bay leaf
- 2 tablespoons sweet soy sauce
- Salt, to taste
- Optional: seasoning powder, to taste
- Sugar, to taste
- Spice Paste:
- 2 cloves garlic
- 4 shallots
- 2 candlenuts
- Palm sugar, to taste
- 1 teaspoon black pepper
- 1/2 teaspoon coriander

Prepare the Ingredients:
- Cut the tofu and tempeh into pieces according to your preference.

Simmer the Ingredients:
- Place the tofu and tempeh into a pot along with the bay leaf, galangal, and sweet soy sauce. Add enough water to cover the ingredients.
- Cook over medium heat, seasoning with salt, sugar, and optional seasoning powder. Adjust the seasoning to taste. Simmer until the liquid reduces and the flavors are absorbed into the tofu and tempeh.

Prepare the Spice Paste:
- Blend or grind together garlic, shallots, candlenuts, palm sugar, black pepper, and coriander to make a smooth spice paste.

Skewer the Tofu and Tempeh:
- Thread the tofu and tempeh pieces onto skewers or bamboo sticks.

Grill the Skewers:
- Heat a non-stick skillet or griddle over medium heat and lightly grease it with oil.
- Grill the skewers of tofu and tempeh, occasionally turning and basting with the remaining spice paste and additional sweet soy sauce. Continue grilling until the tofu and tempeh are slightly crisped and dry.
