Gyeran Mari / Korean Rolled Omelette Recipe 👩‍🍳💞

Ingredients:

  • 3 large eggs
  • 1 small carrot, finely diced
  • 2 green beans, finely chopped
  • 2 cabbage leaves, finely shredded
  • 1 green onion, thinly sliced
  • 3 small red chili peppers (optional, adjust to taste)
  • 1 garlic clove, minced
  • 1/2 teaspoon oil for sautéing vegetables
  • 1/2 teaspoon oil for frying
  • Salt, to taste
  • Seasoning, to taste
  • Ground black pepper, to taste

Instructions:

  1. Prepare the Ingredients:

    • Begin by washing and finely chopping the vegetables. Dice the carrot, chop the green beans, and shred the cabbage. Thinly slice the green onion. If using, finely chop the red chili peppers and mince the garlic.
  2. Sauté the Vegetables:

    • Heat a non-stick skillet over medium heat and add 1/2 teaspoon of oil. Once hot, add the minced garlic and sauté until fragrant. Add the carrot, green beans, and cabbage to the skillet. Cook briefly, just until the vegetables are tender but still retain a slight crunch. Remove from heat and let cool slightly.
  3. Prepare the Egg Mixture:

    • In a bowl, crack the eggs and whisk them until well blended. Season with salt, black pepper, and a touch of seasoning to taste. Add the cooled vegetables and sliced green onion to the egg mixture, stirring to combine evenly.
  4. Cook the Omelette:

    • Wipe the skillet clean and add 1/2 teaspoon of oil. Heat the skillet over medium heat. Pour a portion of the egg mixture into the skillet (about one-third of the mixture) and spread it out evenly. Let it cook until the edges start to set but the center is still slightly runny.
  5. Roll the Omelette:

    • Using a spatula, gently roll the omelette from one end to the other, forming a log shape. Slide the rolled omelette to one side of the skillet. Pour the next portion of the egg mixture into the skillet, allowing it to cook slightly before rolling it over the first roll. Repeat with the remaining egg mixture.
  6. Finish and Serve:

    • Once all the egg mixture has been cooked and rolled, allow the final omelette to cook until fully set. Remove from the skillet and let cool slightly. Slice the omelette into bite-sized pieces.
  7. Serve:
