Pepes Tahu Recipe
Ingredients:
- 2 pieces of white tofu
- 1 cup of lamtoro (Chinese petai beans) or substitute with green beans
- 2 scallions
- 2 tomatoes (preferably green, but red is fine)
- 1/4 cup grated young coconut
- 2 shallots
- 3 cloves garlic
- 5 bird’s eye chilies
- 4 large red chilies
- 1 thumb-sized piece of galangal
- Salt to taste
- Sugar to taste
- Ground coriander to taste
- Royco seasoning (optional, to taste)
- Banana leaves for wrapping
Instructions:

Prepare the Ingredients: Slice the scallions and tomatoes. Clean the lamtoro (or green beans) thoroughly.

Prepare the Tofu Mixture: In a mixing bowl, mash the tofu until smooth. Combine the mashed tofu with the sliced scallions, tomatoes, and grated young coconut. Mix well to incorporate all ingredients.

Make the Spice Paste: In a blender, combine the shallots, garlic, bird’s eye chilies, large red chilies, and galangal. Blend until you achieve a smooth paste. Season with salt, sugar, and ground coriander to taste. Optionally, add Royco seasoning if desired.

Combine and Season: Pour the spice paste into the tofu mixture and stir until everything is well combined. Adjust the seasoning if needed.

Wrap the Pepes: Take a piece of banana leaf and place a portion of the tofu mixture in the center. Fold the leaf to create a secure packet, ensuring that the mixture is well enclosed.

Steam the Pepes: Arrange the wrapped packets in a steamer. Steam for about 5 to 8 minutes, or until the tofu is cooked through and the flavors are well melded.
