Stir-Fried Bean Sprouts with Tofu (Tumis Taoge Tahu)

Ingredients:

  • 1/2 kg large bean sprouts (taoge besar)
  • 4 blocks of tofu
  • 1 tomato
  • 6 red shallots, thinly sliced
  • 3 garlic cloves, thinly sliced
  • 2 red chilies
  • 1/2 teaspoon shrimp paste (terasi)
  • Salt and seasoning to taste
  • Cooking oil

Instructions:

  1. Prepare the Ingredients: Rinse the bean sprouts thoroughly and cut the tofu into small cubes.

  2. Fry the Tofu: Heat oil in a pan and fry the tofu until it is halfway cooked. Remove from the pan and drain on paper towels.

  3. Sauté the Aromatics: In the same pan, heat a little more oil if needed. Add the sliced shallots, garlic, red chilies, shrimp paste, and diced tomato. Sauté until the mixture is fragrant and the tomatoes start to break down.

  4. Combine Ingredients: Add the fried tofu and bean sprouts to the pan with the sautéed aromatics. Stir well to combine.

  5. Season and Simmer: Pour in enough water to slightly cover the ingredients. Season with salt and seasoning according to your taste. Stir everything together and let it cook until the bean sprouts are tender and the flavors meld.

  6. Serve: Once everything is cooked and well combined, serve hot.
