Telur Kecap: A Delicious Indonesian-Style Soy Sauce Egg Dish

Ingredients:

  • 5 large eggs
  • 1 large red chili (seeds removed, sliced diagonally)
  • 2 shallots
  • 1 clove garlic
  • 1 piece of galangal (crushed)
  • 4 tablespoons sweet soy sauce (kecap manis)
  • Salt, to taste
  • 1 teaspoon black pepper
  • Water, as needed

Instructions:

  1. Fry the Eggs: Begin by frying the eggs until they are cooked to your preference, ideally sunny-side up. Fry each egg individually, then set aside.

  2. Prepare the Sauce: In a pan, heat a little oil and sauté the shallots and garlic until fragrant. Add the sliced red chili, sweet soy sauce, salt, and black pepper to the pan. Stir well to combine.

  3. Simmer the Sauce: Pour in enough water to create a sauce base. Allow the mixture to come to a boil.

  4. Add the Eggs: Gently place the fried eggs into the sauce, ensuring they are covered. Reduce the heat to low and let the eggs simmer in the sauce, turning them occasionally so the flavor is evenly absorbed. Continue cooking until the sauce thickens and becomes slightly syrupy, and the eggs are well-coated.

  5. Finish and Serve: Once the sauce has reduced to a thick consistency, turn off the heat. Serve the eggs warm, garnished with additional sliced chili if desired. Enjoy your flavorful Telur Kecap!

This savory dish combines the richness of fried eggs with a sweet and slightly spicy soy sauce, making it a delightful addition to any meal. Happy cooking!
