Bacem Tahu Tempe: A Delightful Indonesian Classic

Ingredients:

  • 1 block of tofu
  • 1 block of tempeh
  • 7 shallots
  • 4 cloves of garlic
  • 1 piece of palm sugar (gula merah)
  • 1 teaspoon coriander seeds (ketumbar)
  • 2 tamarind pods (asam jawa)
  • 1 teaspoon salt
  • 2 tablespoons soy sauce (kecap manis)
  • 1 teaspoon seasoning powder (masako)
  • 1 piece of galangal, crushed (lengkuas)

Instructions:

  1. Prepare the Tofu and Tempeh: Cut the tofu and tempeh into bite-sized pieces. Heat oil in a frying pan and fry the tofu and tempeh until golden brown and crispy. Set aside on paper towels to drain excess oil.

  2. Prepare the Spice Paste: In a blender or food processor, combine the shallots, garlic, and coriander seeds. Blend into a smooth paste.

  3. Cook the Spice Paste: In a pan, heat a little oil over medium heat. Add the blended spice paste and sauté until fragrant and the oil begins to separate from the paste.

  4. Add Flavorings: Slice the palm sugar and add it to the pan, along with the tamarind pods, salt, soy sauce, and seasoning powder. Stir to combine and cook for a few minutes until the sugar is melted and everything is well mixed.

  5. Simmer the Tofu and Tempeh: Add water to the pan to create a sauce and bring it to a simmer. Add the fried tofu and tempeh pieces to the pan, stirring gently to coat them with the spice mixture.

  6. Reduce the Sauce: Allow the mixture to simmer gently until the sauce has reduced and thickened, and the tofu and tempeh have absorbed the flavors.

  7. Final Touches: Once the sauce has almost evaporated and the tofu and tempeh are well coated, remove from heat.

  8. Serve: Transfer the Bacem Tahu Tempe to a serving dish and enjoy it warm.
