Gongso Telur Semarangan: A Flavorful Indonesian Egg Delight
Ingredients:
- 3 large eggs
- 1 tomato, diced
- 1 stalk green onion, chopped
- Fried shallots for garnish (optional)
- 1 tablespoon sweet soy sauce (adjust to taste for sweetness)
- 1 tablespoon chili sauce
- 50 ml water
- Spice Blend:
- 4 shallots
- 2 cloves garlic
- 3 red chilies
- Bird’s eye chilies (to taste)
- Salt, sugar, and chicken bouillon powder, to taste
Instructions:
-
Prepare the Eggs:
- In a bowl, beat the eggs lightly. Heat a bit of oil in a pan over medium heat, then pour in the eggs. Scramble and cook until they are just set but still moist. Remove from heat and set aside.
-
Cook the Spice Blend:
- Using a blender or mortar and pestle, grind the shallots, garlic, red chilies, and bird’s eye chilies into a smooth paste.
- In the same pan used for the eggs, add a bit more oil if needed. Sauté the spice blend until fragrant and golden brown.
-
Combine Flavors:
- Add the chili sauce and sweet soy sauce to the pan, stirring to combine. Pour in the water and bring to a simmer, allowing it to bubble and reduce slightly.
-
Add Vegetables and Eggs:
- Stir in the diced tomato and the pre-cooked scrambled eggs. Mix well, ensuring the eggs and tomato are evenly coated with the sauce. Cook until the sauce has reduced and thickened a bit.
-
Finish and Garnish:
- Add the chopped green onions and stir briefly to combine. Taste and adjust seasoning with salt, sugar, and chicken bouillon powder as desired.
-
Serve:
- Transfer the dish to a serving plate and sprinkle with fried shallots if using.
This Gongso Telur Semarangan is perfect for breakfast or a light meal, offering a delightful mix of spicy, sweet, and savory flavors. Enjoy! 😁
