Gongso Telur Semarangan: A Flavorful Indonesian Egg Delight

Ingredients:

  • 3 large eggs
  • 1 tomato, diced
  • 1 stalk green onion, chopped
  • Fried shallots for garnish (optional)
  • 1 tablespoon sweet soy sauce (adjust to taste for sweetness)
  • 1 tablespoon chili sauce
  • 50 ml water
  • Spice Blend:
    • 4 shallots
    • 2 cloves garlic
    • 3 red chilies
    • Bird’s eye chilies (to taste)
    • Salt, sugar, and chicken bouillon powder, to taste

Instructions:

  1. Prepare the Eggs:

    • In a bowl, beat the eggs lightly. Heat a bit of oil in a pan over medium heat, then pour in the eggs. Scramble and cook until they are just set but still moist. Remove from heat and set aside.
  2. Cook the Spice Blend:

    • Using a blender or mortar and pestle, grind the shallots, garlic, red chilies, and bird’s eye chilies into a smooth paste.
    • In the same pan used for the eggs, add a bit more oil if needed. Sauté the spice blend until fragrant and golden brown.
  3. Combine Flavors:

    • Add the chili sauce and sweet soy sauce to the pan, stirring to combine. Pour in the water and bring to a simmer, allowing it to bubble and reduce slightly.
  4. Add Vegetables and Eggs:

    • Stir in the diced tomato and the pre-cooked scrambled eggs. Mix well, ensuring the eggs and tomato are evenly coated with the sauce. Cook until the sauce has reduced and thickened a bit.
  5. Finish and Garnish:

    • Add the chopped green onions and stir briefly to combine. Taste and adjust seasoning with salt, sugar, and chicken bouillon powder as desired.
  6. Serve:

    • Transfer the dish to a serving plate and sprinkle with fried shallots if using.
