Spicy Indonesian Egg and Tofu Balado Delight

Telur n Tahu Bumbu Balado

Ingredients

  • 6 hard-boiled eggs, peeled and set aside
  • 4 blocks of white tofu, cut diagonally and scored
  • Cooking oil for frying

Spice Paste:

  • 8 curly red chilies
  • 6 red bird’s eye chilies
  • 8 shallots
  • 4 cloves garlic
  • 3 ripe red tomatoes
  • A thumb-sized piece of galangal
  • 2 bay leaves
  • 3 kaffir lime leaves
  • 1 stalk lemongrass, bruised
  • 1 tablespoon white sugar
  • 1 teaspoon fine salt
  • Seasoning, to taste (optional)

Instructions

  1. Prepare the Eggs:

    • Pierce the boiled eggs several times with a fork to prevent them from bursting during frying. Fry the eggs in hot oil until they are golden brown and set aside.
  2. Prepare the Tofu:

    • Sprinkle a little salt over the tofu pieces. Fry them briefly until they form a light golden crust. Set aside.
  3. Make the Spice Paste:

    • In a blender or food processor, combine the curly red chilies, bird’s eye chilies, shallots, garlic, and tomatoes to create a smooth paste.
  4. Cook the Spice Paste:

    • In a large pan, heat a little oil and sauté the spice paste until fragrant and the oil starts to separate. Add the bay leaves, kaffir lime leaves, and bruised lemongrass. Stir well to combine.
  5. Combine and Cook:

    • Add the fried eggs and tofu to the pan. Season with sugar, salt, and optional seasoning to taste. Reduce the heat to low and let the flavors meld together, stirring occasionally, until the spice paste is well absorbed by the eggs and tofu.
  6. Serve:

    • Remove from heat and serve the Telur n Tahu Bumbu Balado hot with steamed rice.
