Sawi Hijau Stir-Fry with Tofu and Meatballs

Ingredients:

  • 2 bunches of green mustard greens
  • 3 blocks of tofu, cut into cubes
  • 3 meatballs, sliced
  • 2 bird’s eye chilies, sliced
  • 2 cloves of garlic
  • 2 shallots
  • A piece of galangal
  • 2 bay leaves
  • To taste: sugar and salt
  • 1 tablespoon oyster sauce

Instructions:

  1. Prepare Ingredients:

    • Rinse the green mustard greens, chilies, shallots, garlic, tofu, and meatballs thoroughly. Cut the tofu into cubes and slice the meatballs.
  2. Sauté Aromatics:

    • Heat a pan over medium heat. Add the sliced shallots and garlic, sautéing until they become fragrant.
    • Incorporate the sliced chilies, galangal, and bay leaves into the pan. Season with sugar, salt, and oyster sauce. Adjust the seasoning to taste.
  3. Add Tofu and Meatballs:

    • Introduce the tofu cubes and meatballs to the pan. Stir well to ensure they are evenly coated with the aromatic mixture.
  4. Simmer:

    • Pour in enough water to cover the ingredients. Bring the mixture to a boil.
    • Once boiling, add the green mustard greens. Stir and cook until the greens are slightly wilted but still vibrant.
  5. Finish and Serve:

    • Turn off the heat and transfer the dish to a serving plate. (Though I rarely transfer my dishes to a serving plate—feel free to skip this step if you prefer.)
