Sawi Hijau Stir-Fry with Tofu and Meatballs
Ingredients:
- 2 bunches of green mustard greens
- 3 blocks of tofu, cut into cubes
- 3 meatballs, sliced
- 2 bird’s eye chilies, sliced
- 2 cloves of garlic
- 2 shallots
- A piece of galangal
- 2 bay leaves
- To taste: sugar and salt
- 1 tablespoon oyster sauce

Prepare Ingredients:
- Rinse the green mustard greens, chilies, shallots, garlic, tofu, and meatballs thoroughly. Cut the tofu into cubes and slice the meatballs.

Sauté Aromatics:
- Heat a pan over medium heat. Add the sliced shallots and garlic, sautéing until they become fragrant.
- Incorporate the sliced chilies, galangal, and bay leaves into the pan. Season with sugar, salt, and oyster sauce. Adjust the seasoning to taste.

Add Tofu and Meatballs:
- Introduce the tofu cubes and meatballs to the pan. Stir well to ensure they are evenly coated with the aromatic mixture.

Simmer:
- Pour in enough water to cover the ingredients. Bring the mixture to a boil.
- Once boiling, add the green mustard greens. Stir and cook until the greens are slightly wilted but still vibrant.

- Turn off the heat and transfer the dish to a serving plate. (Though I rarely transfer my dishes to a serving plate—feel free to skip this step if you prefer.)
