Crispy Fried Tofu with Savory Peanut Sauce
Ingredients:
- 8 pieces of tofu, washed and cut into 2 cm cubes
- 100 grams rice flour
- 2 cloves garlic
- 1/2 teaspoon coriander (optional, to taste)
- Sugar and salt, to taste
- A pinch of turmeric (optional, to taste)
For the Peanut Sauce:
- 2 tablespoons peanuts
- 1/2 clove garlic
- 2 small red chilies, washed and fried
- 3 tablespoons sweet soy sauce (kecap manis)
- Sugar and salt, to taste
- Water, as needed
Instructions:
-
Begin by washing the tofu and cutting it into 2 cm cubes according to your preference.
-
In a mortar and pestle or food processor, finely grind the garlic and optional coriander if using. Transfer the ground mixture to a mixing bowl.
-
Add the rice flour to the bowl and mix well. If you prefer a slightly thicker batter, you can adjust the amount of rice flour. Add a pinch of turmeric for color if desired.
-
Gradually add water to the rice flour mixture, stirring continuously until you achieve a slightly runny batter. This will help create a crispy coating on the tofu.
-
Gently coat each tofu cube with the batter, ensuring it is evenly covered.
-
Heat oil in a frying pan over medium heat. Fry the coated tofu cubes in batches until golden brown and crispy. Remove the tofu from the oil and drain on paper towels.
-
For the peanut sauce, first fry the peanuts, garlic, and red chilies until golden and aromatic. Allow them to cool slightly before grinding them together in a mortar and pestle or food processor until smooth.
-
In a bowl, mix the ground peanut mixture with sugar, salt, and sweet soy sauce. Adjust the consistency by adding a little water if necessary, and stir until well combined.
-
Serve the crispy tofu hot, accompanied by the savory peanut sauce for dipping.
