Title: Savory Vegetable Soup with Chicken Meatballs, Sausages, and Tempeh in Spicy Soy Sauce

Ingredients:

For the Soup:

  • 2 packs mixed soup vegetables (cabbage, carrots, potatoes, green beans, celery)
  • 1/2 head cauliflower
  • 3 chicken sausages
  • 20 small chicken meatballs

For the Soup Spice Blend:

  • 5 shallots
  • 4 garlic cloves
  • Black pepper, to taste
  • Salt, to taste
  • Flavor enhancer, to taste

For the Sambal:

  • Soy sauce
  • Chili
  • Lime juice

For the Tempeh and Tofu Marinade:

  • 5 garlic cloves
  • Coriander, to taste
  • Galangal, to taste
  • Turmeric, to taste
  • Lemongrass
  • Kaffir lime leaves

Steps:

  1. Prepare the Soup: Thoroughly wash all vegetables and cut them into bite-sized pieces. Place them into a pot filled with water. Bring to a boil over medium heat.

  2. Make the Spice Blend: While the vegetables are cooking, blend the shallots, garlic, black pepper, salt, and flavor enhancer until smooth.

  3. Add Meatballs and Sausages: Once the water starts to boil, add the spice blend, chicken sausages, and chicken meatballs to the pot. Let it simmer until the vegetables are tender and the sausages are cooked through.

  7. Cook the Tempeh and Tofu: Heat oil in a separate pan. Add the marinated tempeh and tofu. Add a little water if necessary to help the flavors infuse. Cook until the water is absorbed and the tempeh and tofu are golden and crisp.

  8. Prepare Sambal: Mix soy sauce, chopped chili, and lime juice to create a spicy dipping sauce.

  9. Serve: Ladle the vegetable soup into bowls. Add pieces of the cooked tempeh and tofu. Serve with the spicy sambal on the side for added flavor.
