Balado Telur Ceplok Simple: A Flavorful Indonesian Egg Dish

Ingredients:

  • 1/2 kg chicken eggs (fried sunny side up)
  • 1 tablespoon sweet soy sauce
  • Seasoning to taste
  • Cooking oil
  • Water, as needed

For the Spice Paste:

  • 10 large red chilies
  • 10 small red chilies
  • 4 cloves garlic
  • 7 shallots
  • 2 candlenuts

Instructions:

  1. Prepare the Spice Paste: Begin by heating a small amount of cooking oil in a pan. Add the spice paste ingredients—large red chilies, small red chilies, garlic, shallots, and candlenuts—into a blender or food processor. Blend until smooth.

  2. Cook the Spice Paste: Pour the blended spice paste into the heated pan. Sauté over medium heat until the mixture becomes fragrant and the oil begins to separate.

  3. Add Liquids and Seasoning: Pour in a sufficient amount of water, add the sweet soy sauce, and season with seasoning to taste. Stir well and allow the mixture to simmer. Taste and adjust seasoning as needed.

  4. Incorporate the Eggs: Gently add the pre-fried sunny side up eggs into the pan with the spice mixture. Ensure that the eggs are well-coated with the sauce.
