  • 20 shallots

  • 1/2 teaspoon salt
  • 1/2 teaspoon chicken stock powder
  • 1 stalk green onion
  • 1 tablespoon sweet soy sauce (kecap manis)
  • Cooking oil for frying

Instructions:

  1. Prepare the Eggs: Heat a generous amount of cooking oil in a skillet over medium heat. Crack the eggs into the skillet, one at a time, allowing them to fry until they are about half cooked. Gently stir the eggs to scramble them, cooking until they are fully set. Once cooked, transfer the eggs to a plate and set aside.

  2. Prepare the Aromatics: Slice the shallots, garlic, red bird’s eye chilies, green bird’s eye chilies, and tomato as shown in the accompanying image.
