Tumis Broccoli and Tofu
Ingredients:
- 4 blocks of firm tofu, cut into cubes
- Fresh broccoli florets, enough to your liking
- 4 scallions, chopped
- 4 cloves garlic, minced
- 1 red onion, finely sliced
- 1 tomato, diced
- Black pepper, to taste
- Sugar, to taste
- Salt, 1 tablespoon
- Oyster sauce, to taste
- Ground black pepper, to taste
- Cooking oil, as needed
- Water, as needed
Instructions:

Prepare the Tofu: Heat oil in a pan over medium heat and fry the tofu cubes until they turn golden brown and crispy. Once done, remove them from the pan and set aside.

Prepare the Broccoli: Rinse the broccoli florets in salted water. For quicker cooking, you can blanch the broccoli by dipping it in boiling water for a minute or so, then transfer it to an ice bath to stop the cooking process. This step ensures the broccoli is tender yet retains a vibrant green color.

Chop the Vegetables: Dice the tomato, finely slice the red onion, and chop the scallions.

Sauté the Aromatics: In a large skillet or wok, heat a little oil over medium heat. Add the minced garlic, red onion, and chopped scallions. Sauté until they become fragrant and the onions turn translucent.

Cook the Broccoli: Add a small amount of water to the pan and then add the broccoli florets. Cook until the broccoli is tender but still crisp.
