Gadon Tahu Kornet

Gadon Tahu Kornet is a delightful and savory Indonesian dish that combines the rich flavors of spiced corned beef with soft, fluffy tofu. Wrapped in aromatic banana leaves and steamed to perfection, this dish is a true treat for the taste buds. Here’s how you can make it at home:

Ingredients:

  • 2 tablespoons corned beef (kornet sapi)
  • 2 blocks of firm tofu, crumbled
  • 1 stalk of scallions, finely sliced
  • 1/2 teaspoon salt
  • A pinch of ground black pepper
  • 1/2 teaspoon granulated sugar
  • 1 egg, beaten
  • Cooking oil, for sautéing
  • Banana leaves, for wrapping

For the Spice Paste:

  • 1 candlenut (kemiri)
  • 1 kaffir lime leaf, finely sliced
  • 2 cloves garlic
  • 3 cloves shallots
  • 1/2 ripe red tomato

Instructions:

  1. Prepare the Spice Paste:

    • Heat a small amount of cooking oil in a pan over medium heat.
    • Sauté the candlenut, garlic, shallots, and red tomato until aromatic and the shallots are soft.
    • Add the finely sliced kaffir lime leaf and cook for another minute.
    • Remove from heat and let it cool slightly. Blend or grind the mixture until smooth.
  2. Mix the Ingredients:

    • In a large bowl, combine the crumbled tofu and corned beef.
    • Add the finely sliced scallions, the prepared spice paste, salt, sugar, and ground black pepper.
    • Mix well to ensure all ingredients are evenly distributed.
    • Stir in the beaten egg until the mixture is well combined.
  3. Prepare for Steaming:

    • Preheat your steamer.
    • Cut the banana leaves into squares large enough to wrap around the mixture.
    • Place a portion of the tofu-corned beef mixture onto each piece of banana leaf and fold the edges to create a sealed packet.
  4. Steam the Gadon Tahu Kornet:

    • Arrange the wrapped packets in the steamer.
    • Steam for about 30 minutes, or until the mixture is cooked through and firm to the touch.
  5. Serve:

    • Carefully unwrap the banana leaves and serve the Gadon Tahu Kornet warm.
