  • 3 shallots (finely ground)
  • 2 cloves of garlic (finely ground)
  • 10 red curly chilies (optional, finely ground for heat)
  • 2 tablespoons oyster sauce
  • 1 tablespoon granulated sugar
  • 2 tablespoons chicken seasoning powder (such as Royco)
  • Salt (to taste)
  • Water (as needed)
  • Cooking oil (for frying)
  • 1 segment of galangal (thinly sliced and slightly crushed)

Instructions:

  1. Prepare the Ingredients:

    • Begin by preparing the ceciwis by washing and trimming them. Cut the tofu into small cubes and fry them until they are just cooked through but still slightly firm. Set aside.
  2. Sauté Aromatics:
