Instructions:

  1. Prepare the Batter: In a mixing bowl, combine the Sajiku Serbaguna seasoning mix, tapioca flour, finely sliced green onion, and a pinch of salt. Mix these ingredients together until they are evenly distributed.

  2. Add Water Gradually: Slowly add water to the dry mixture, a little at a time, stirring continuously. The goal is to achieve a thick batter that is smooth and can be handled without sticking to your hands. The consistency should be firm enough to coat the tofu but not too runny.

  3. Coat the Tofu: Carefully dip each piece of empty Tahu Sumedang into the batter, ensuring they are fully coated. Arrange the coated tofu pieces in a steamer basket, making sure they are not overcrowded.

  4. Steam the Tofu: Steam the coated tofu pieces over boiling water for about 15-20 minutes, or until they are fully cooked. Once done, remove them from the steamer and let them cool to room temperature.

  5. Cool and Store: After the tofu pieces have cooled, they can be stored in the refrigerator for later use, or they can be fried immediately.

  6. Fry the Tofu: Heat oil in a frying pan or deep fryer until it is hot. Fry the steamed tofu pieces in the hot oil until they turn golden brown and crispy. Remove them from the oil and drain on paper towels.
