Creamy Bamboo Shoot and Tofu Soup with Spiced Beef

Rebung Tahu Kuah Kuning

Ingredients:

  • 2 bowls bamboo shoots, sliced
  • 2 packets coconut milk powder
  • 200 grams beef, cut into cubes
  • 3 bay leaves
  • 2 liters water
  • 7 pieces of brown tofu, cut in half
  • Spice Paste:
    • Salt and sugar to taste
    • 3 cloves garlic
    • 5 shallots
    • 2 candlenuts
    • A thumb-sized piece of ginger
    • A thumb-sized piece of turmeric
    • A thumb-sized piece of galangal
    • 1 tablespoon coriander seeds

Instructions:

  1. In a large pot, boil the beef in water until tender.
  2. Once the beef is cooked and tender, add the spice paste, coconut milk powder, and tofu. Stir and bring to a boil.
  3. Add the bamboo shoots, coconut milk powder, and bay leaves to the pot. Continue to cook until everything is heated through and the flavors meld together.
  4. Taste and adjust the seasoning with salt and sugar as needed.
  5. Serve hot and enjoy!
