Sate Tahu with Spicy Peanut Sauce

Ingredients:

  • 15 pieces of firm tofu
  • 100 grams all-purpose flour
  • 200 grams tapioca flour
  • Garlic (to taste)
  • Salt (to taste)
  • Ground black pepper (to taste)

For the Peanut Sauce:

  • 500 grams peanuts
  • 5 cloves garlic
  • 10 small chili peppers (or to taste)
  • Palm sugar or regular sugar (to taste)
  • Salt (to taste)
  • Kaffir lime leaves (optional, finely chopped)

For the Basting Sauce:

  • Sweet soy sauce (kecap manis) (to taste)
  • Salt (to taste)

Instructions:

  1. Prepare the Tofu:

    • Begin by making the tofu marinade. In a mixing bowl, combine all-purpose flour, tapioca flour, minced garlic, salt, and ground black pepper. Adjust the seasoning to taste.
    • Coat each piece of tofu thoroughly with the flour mixture, ensuring an even coating.
    • Steam the coated tofu pieces until cooked through, approximately 10-15 minutes. While the tofu is steaming, prepare the peanut sauce.
  2. Make the Peanut Sauce:

    • Heat a small amount of oil in a frying pan over medium heat. Add the peanuts, garlic, and chili peppers. Fry until the peanuts and garlic are golden and fragrant. Be careful not to burn them.
    • Allow the mixture to cool slightly, then transfer it to a mortar and pestle (or food processor if preferred). Grind until you achieve a smooth paste. If using a mortar and pestle, this traditional method will give the sauce a richer flavor compared to blending.
    • Mix in finely chopped kaffir lime leaves (if using), palm sugar (or regular sugar), and salt to taste. Adjust the seasoning according to your preference.
  3. Assemble the Sate Tahu:

    • Once the tofu is cooked and slightly cooled, cut it into bite-sized pieces and skewer them onto bamboo sticks or skewers.
    • Baste the tofu skewers with a mixture of sweet soy sauce and a pinch of salt. Grill the skewers over a medium flame, turning occasionally, until they are nicely charred and caramelized.
  4. Serve:

    • After grilling, drizzle the spicy peanut sauce over the tofu skewers.
    • For added freshness and flavor, garnish with a sprinkle of finely chopped kaffir lime leaves and raw red onions if desired.
