Tahu Telor Bumbu Rujak Madura
Ingredients:
- 1/2 block of tofu
- 2 eggs
- Lontong (compressed rice cake) or steamed rice, to serve
For the Bumbu Rujak (Spicy Peanut Sauce):
- 1 handful of fried peanuts
- 5 red chilies
- 1 tablespoon Madura shrimp paste (or any other shrimp paste)
- 1 teaspoon brown sugar
- Salt and sugar, to taste
For the Vegetables:
- 1 bunch of water spinach (kangkung)
- 1 handful of bean sprouts (short or long)
- 1 cucumber, diced
Instructions:

Prepare the Tofu and Eggs:
- Heat oil in a pan and fry the tofu until it is half-cooked. Remove from the pan and cut into small pieces.
- In a bowl, mix the tofu pieces with the eggs, salt, and ground pepper to taste.
- Heat oil in a pan and pour in the tofu and egg mixture. Cook until the mixture is golden brown and crispy. Set aside.

Make the Bumbu Rujak:
- In a mortar and pestle or food processor, grind the fried peanuts and red chilies together.
- Add the Madura shrimp paste and brown sugar to the mixture. Continue to grind until well combined.
- Season with salt and additional sugar to taste. Adjust the flavors according to your preference.

Prepare the Vegetables:
- Boil water and blanch the water spinach and bean sprouts until tender. Drain and set aside.
- Dice the cucumber into small cubes.

Assemble the Dish:
- Serve the tofu and egg mixture over a bed of lontong or steamed rice.
- Top with the bumbu rujak sauce and arrange the blanched water spinach, bean sprouts, and diced cucumber around the dish.
