Balado Telur Tahu
Ingredients:
- 1/2 kg eggs
- 1 pack tofu
- 4 cloves garlic
- 5 shallots
- 10 curly chilies
- 5 bird’s eye chilies
- 5 candlenuts
- 1 tomato
- 1 clove ginger
- 1 piece galangal
- 1 stalk lemongrass
- 2 bay leaves
- 2 kaffir lime leaves
- 1/2 tablespoon salt
- 2 pieces palm sugar
Instructions:
-
Prepare the Eggs and Tofu:
- Boil the eggs until they are fully cooked. Once boiled, remove them from the water, allow them to cool, peel, and then fry until golden brown. This gives the eggs a delightful texture and helps them absorb the sauce better.
- Cut the tofu into cubes and fry until they are golden and firm. This helps the tofu maintain its shape and adds a nice crispy texture.
-
Prepare the Spice Paste:
- In a blender or mortar, grind the garlic, shallots, curly chilies, bird’s eye chilies, candlenuts, and tomato into a smooth paste.
- Once the paste is ready, lightly crush the ginger, galangal, and lemongrass to release their flavors.
-
Cook the Spice Paste:
- Heat a little oil in a pan over medium heat. Add the spice paste and sauté until it turns slightly reddish and fragrant.
- Add one cup of water to the pan to create a rich sauce.
-
Add Aromatics and Seasoning:
- Add the bay leaves and kaffir lime leaves to the pan, stirring them into the sauce.
- Season with salt and palm sugar, adjusting to taste.
-
Combine and Simmer:
- Add the fried eggs and tofu to the pan, gently stirring to coat them in the sauce.
- Allow the mixture to simmer until the eggs and tofu absorb the flavors and the sauce thickens, reducing slightly.
-
Serve:
- Once the sauce has reduced and thickened, remove from heat. Your Balado Telur Tahu is now ready to be served. Enjoy this flavorful and spicy Indonesian dish with steamed rice for a satisfying meal.
Tips:
- For a richer flavor, you can add a splash of coconut milk during the simmering process.
- Adjust the number of chilies according to your heat preference.
