Tahu Pletok: Crispy Indonesian Tofu Delight
Ingredients:
- 4 large white tofu blocks, cut into long strips or squares
- 200 grams tapioca flour
- 100 grams all-purpose flour
- 6 cloves garlic
- Salt to taste
- 1.2 teaspoons ground black pepper
- 1/2 sachet Royco flavoring (or equivalent seasoning powder)
- 2 stalks green onions, finely sliced
- Warm water, as needed
- Sweet soy sauce, to taste
- 5 bird’s eye chilies, finely sliced
- Cooking oil, for frying

Prepare the Garlic: Begin by grinding the garlic cloves into a fine paste. Set aside half of this garlic paste for the dipping sauce.

Make the Batter: In a mixing bowl, combine the tapioca flour, all-purpose flour, remaining garlic paste, salt, black pepper, Royco seasoning, and sliced green onions. Gradually add warm water while stirring until you achieve a smooth, thick batter.

Coat the Tofu: Take each tofu piece and spread a generous amount of batter onto one side. Heat oil in a frying pan over medium heat. Once hot, carefully place the batter-coated tofu pieces into the oil.

Fry the Tofu: Fry the tofu until golden brown and crispy on all sides. Remove from the oil and drain on paper towels. Cut the fried tofu into smaller bite-sized pieces.

Prepare the Dipping Sauce: While the tofu is frying, prepare the dipping sauce by mixing the reserved garlic paste with sweet soy sauce, salt, and sliced bird’s eye chilies. Stir well to combine.

Serve: Arrange the crispy tofu pieces on a serving plate. Serve warm with the spicy sweet soy dipping sauce on the side.
