Prep Time: 1 hour

Cook Time: 30 minutes

Total Time: 1 hour 31 minutes

Servings: 20

Ingredients

For the Dough:

  • 1/2 cup warm water
  • 2 tablespoons sugar
  • 2 1/4 teaspoons instant yeast
  • 1 cup milk
  • 1/2 cup butter, melted
  • 2 large eggs
  • 1/2 teaspoon salt
  • 4 cups all-purpose flour (plus extra for dusting)

For the Filling:

  • 1 cup butter, melted
  • 1 cup brown sugar
  • 2 tablespoons ground cinnamon

For the Cream Cheese Frosting:

  • 4 ounces cream cheese, softened
  • 1/4 cup butter, softened
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 2 cups powdered sugar

Instructions

  1. Activate the Yeast:

    • In a small bowl, combine the warm water and sugar. Sprinkle the instant yeast over the top, stirring gently until the yeast is dissolved. Set this mixture aside to proof for about 5 minutes, or until it becomes frothy and bubbles.
  2. Prepare the Dough:

    • In a large mixing bowl, whisk together the instant vanilla pudding and milk until smooth. Add 1/2 cup of melted butter, eggs, and salt to the bowl, mixing until well combined.
    • Pour in the yeast mixture and stir to incorporate. Gradually add the all-purpose flour, a little at a time, kneading the dough until it is smooth and elastic. If necessary, add a bit more flour to achieve the right consistency; the dough should be soft but not sticky.
    • Place the dough in a very large, greased bowl. Cover the bowl with a clean kitchen towel or plastic wrap and let the dough rise in a warm, draft-free area until it doubles in size. This should take about 1 hour.
  3. Second Rise:

    • Once the dough has risen, gently punch it down to release any air bubbles. Cover the dough again and let it rise for an additional 20 minutes.
  4. Roll Out the Dough:

    • Lightly flour a large work surface and roll the dough out into a rectangle approximately 34 inches by 21 inches. Brush the surface of the dough with 1 cup of melted butter, spreading it evenly.
  5. Add the Filling:

    • In a small bowl, combine the brown sugar and cinnamon. Sprinkle this mixture evenly over the buttered dough.
  6. Shape the Rolls:

    • Carefully roll the dough up from one edge to the other to form a tight log. Use dental floss or a serrated knife to cut the rolled dough into approximately 20 slices. For best results, use dental floss to cut the rolls cleanly without squishing them.
  7. Prepare for Baking:

    • Arrange the sliced rolls in a large, greased baking pan. Pat each roll gently to help them keep their shape. Cover the pan and let the rolls rise in a warm place for about 20 minutes, or until they have puffed up.
  8. Bake:

    • Preheat your oven to 350°F (175°C). Bake the rolls for 20 to 30 minutes, or until they are golden brown and cooked through. Keep an eye on them to ensure they don’t over-brown.
  9. Prepare the Cream Cheese Frosting:

    • While the rolls are baking, make the frosting. In a medium bowl, beat the softened cream cheese and butter together until smooth and creamy. Add the vanilla extract and milk, continuing to beat until well blended.
    • Gradually add the powdered sugar, beating until the frosting is smooth and spreadable.
  10. Frost the Rolls:

    • Once the cinnamon rolls are out of the oven and still warm, spread the cream cheese frosting generously over the top of each roll. The warmth of the rolls will help the frosting melt slightly, creating a decadent glaze.

Enjoy these heavenly cinnamon rolls fresh out of the oven with a cup of coffee or hot chocolate. Their rich, gooey center and sweet, creamy frosting make them a delightful treat that’s perfect for sharing with friends and family. 🍪💕
