Stir-Fried Tofu with Mustard Greens (Tumis Tahu Sawi)

Ingredients

Mustard greens (sawi hijau) 1 small bunch
Tofu 4 pieces
Beef sausage 2 pieces
Spice mix (sliced)
Green chili (cabe ijo) 3
Bird’s eye chili (cabe rawit) 4
Curly red chili (cabe keriting) 3
Shallots 3 cloves
Garlic 3 cloves
Small tomato 1/2 piece
Saori sauce 1 packet
Galangal 1 small piece (crushed)
Bay leaf 1
Seasoning (MSG) To taste
Salt To taste

Steps

  1. Prepare the Ingredients:

    • Cut the tofu and sausages into bite-sized pieces.
    • Fry the tofu and sausages briefly in a small amount of oil until lightly golden. Set them aside.
    • Rinse the mustard greens thoroughly and chop them into manageable pieces.
  2. Prepare the Spice Mix:

    • Slice the green chili, bird’s eye chili, curly red chili, shallots, garlic, and tomato.
  3. Stir-Frying the Aromatics:

    • Heat a pan over medium heat and add a small amount of oil.
    • Stir-fry the sliced shallots and garlic until they become fragrant.
    • Add the chili slices and stir-fry for another minute.
  4. Cooking the Vegetables:

    • Add the chopped mustard greens to the pan, followed by a splash of water to create steam.
    • Toss in the galangal and bay leaf, stirring the mixture briefly to allow the flavors to combine.
  5. Adding Tofu and Sausage:

    • Once the mustard greens have softened slightly, add the fried tofu and sausage.
    • Stir well to combine the ingredients.
  6. Seasoning and Final Adjustments:

    • Pour in the Saori sauce and season with salt and seasoning (MSG) to taste.
    • Adjust the flavor according to your preference.
  7. Serve:

    • Serve your delicious stir-fried tofu and mustard greens hot with steamed rice for a satisfying and savory meal!
