Instructions

  1. Roast the Capsicums: Begin by preheating your oven to 200°C (400°F) or set your grill (broiler) to high. Slice the red and yellow capsicums into quarters, removing the stem, seeds, and membrane. Coat them thoroughly with olive oil and place them skin-side up in a roasting tin. Roast until the skin blackens and bubbles, then transfer the capsicums to a plastic bag, sealing it until they cool. Once cool, peel off as much skin as possible.

  2. Prepare the Lamb Shanks: Preheat your oven to a moderate 180°C (350°F). In a large jug, combine beef stock powder, garlic powder, soup mix, red wine, and hot water. Add the entire contents of the can of chopped tomatoes to this mixture, stirring well.

  3. Sear the Lamb: Heat a tablespoon of olive oil in a large ovenproof frypan or Dutch oven over high heat. Add the lamb shanks, ensuring they are coated in oil, and sear until browned on all sides. Remove the shanks from the pan and set aside.

  4. Cook the Aromatics: Lower the heat, leaving just one tablespoon of oil in the pan. Add the onions, garlic, thyme, and tomato paste, cooking for 3-5 minutes until fragrant.

  5. Combine and Cook: Pour the jug mixture into the pan and stir well. Return the lamb shanks to the pan, turning them to coat in the sauce. Increase the heat and bring the liquid to a boil. Once boiling, cover the pan and transfer it to the oven, or if your pan isn’t ovenproof, pour everything into a suitable baking dish.

  6. Braise the Lamb: Cook the lamb shanks in the oven for 2 hours. After 2 hours, add the roasted capsicums, cover, and continue to cook for an additional 30 minutes.

  7. Final Touches: Skim any excess fat from the sauce before serving. Adjust seasoning with freshly ground black pepper and salt to taste.
