Stir-Fried Bok Choy with Tofu and Egg (Tumis Sawi Tahu Telur)

This delightful stir-fry of bok choy, tofu, and egg is a quick, nutritious, and flavorful dish perfect for any meal. The crispness of the bok choy combined with the softness of silky tofu and the richness of scrambled egg makes for a satisfying bite. With the perfect balance of savory seasonings, this dish is both simple and delicious.

Ingredients:

Ingredients Quantity
Bok choy (sawi) 1 bunch, washed and chopped
Silken tofu 2 blocks, cut into desired size
Egg 1 large
Shallots 4, thinly sliced
Garlic 3 cloves, thinly sliced
Red chili peppers To taste, sliced diagonally
Salt To taste
Sugar To taste
Ground pepper To taste
Beef bouillon powder To taste (optional)
Cooking oil As needed

Instructions:

  1. Fry the Tofu:

    • Heat a generous amount of oil in a pan over medium heat.
    • Carefully add the tofu pieces and fry until golden on all sides. Remove from the pan and set aside to drain excess oil.
  2. Sauté Aromatics:

    • In the same pan, leave a little oil and sauté the sliced shallots, garlic, and red chili until fragrant and lightly browned.
  3. Cook the Egg:

    • Push the sautéed aromatics to the side of the pan, and crack the egg into the pan.
    • Scramble the egg until cooked, then mix it with the sautéed aromatics.
  4. Add the Bok Choy:

    • Add a splash of water to the pan and stir in the chopped bok choy.
    • Cook for a few minutes until the bok choy begins to wilt.
  5. Combine and Season:

    • Return the fried tofu to the pan and stir gently to combine.
    • Add salt, sugar, ground pepper, and beef bouillon powder (if using) to taste. Stir well and adjust seasoning as needed.
  6. Serve:

    • Once the bok choy has softened and the flavors have melded, remove the dish from heat.
    • Serve the stir-fried bok choy, tofu, and egg hot, either on its own or alongside steamed rice for a complete meal.
