Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine 4 cups of chopped rhubarb, 1 ½ cups of sugar, and ⅓ cup of dry tapioca. Mix well and allow the mixture to set for about 5 minutes, stirring occasionally to help dissolve the sugar.
  3. In a separate bowl, beat 3 large eggs until well mixed, then add ½ teaspoon of salt and 2 ⅔ teaspoons of cream. Stir until combined.
  4. Pour the egg mixture into a greased 9 x 12-inch baking pan or glass dish, spreading it evenly.
  5. Sprinkle the rhubarb mixture over the egg layer and finish with a light dusting of nutmeg.
  6. In a small bowl, blend together ¼ cup of flour, ¾ cup of sugar for the topping, and 1 stick (½ cup) of softened butter until crumbly. Sprinkle this crisp topping generously over the custard layer.
  7. Bake in the preheated oven for 40-60 minutes or until the top is golden brown and the custard is set.
  8. Allow to cool slightly before serving warm, ideally with a scoop of vanilla ice cream or sweetened whipped cream for an ultimate indulgence.
