Tofu (fried, ready-to-use) 10 pieces
Carrot (shredded) 1 piece
Cabbage (roughly chopped) 6 leaves
Bean Sprouts 1 handful
Celery (finely sliced) 1 stalk
Green Onion (finely sliced) 1 stalk
Ground Spices:
– Garlic 7 cloves
– Shallots 9 cloves
– Pepper ½ teaspoon
– Bouillon powder 1 teaspoon
– Salt to taste
– Bird’s Eye Chili to taste
Coating for Tofu:
– All-purpose Flour 100 grams
– Rice Flour 1½ teaspoons
– Tapioca Flour 1 tablespoon
– Ground Coriander 1 teaspoon
– Salt ½ teaspoon
– Water 150 ml
Sambal Petis:
– Shrimp Paste 2 tablespoons
– Sugar 1 tablespoon
– Salt ½ teaspoon
– Soy Sauce 1 tablespoon
– Fried Garlic to taste
– Bird’s Eye Chili to taste
– Water 200 ml
– Cornstarch (mixed with a little water) 1 tablespoon

Instructions

  1. Prepare the Vegetable Filling:
Begin by heating a pan over medium heat, then add a drizzle of oil. Sauté the ground spices (garlic, shallots, pepper, bouillon powder, salt, and bird’s eye chili) until fragrant and cooked through. Add the shredded carrot and cook until slightly softened. Next, toss in the cabbage, bean sprouts, celery, and green onion. Stir well for a brief moment until the vegetables are combined and just tender. Remove from heat and set aside to cool slightly.

  2. Stuff the Tofu:
Take each piece of fried tofu and carefully slice open one side to create a pocket. Fill the pocket generously with the sautéed vegetable mixture, ensuring each piece is well-stuffed. Repeat this process for all the tofu pieces.

  3. Prepare the Coating:
In a bowl, combine all-purpose flour, rice flour, tapioca flour, ground coriander, salt, and water. Mix until you achieve a smooth batter. Dip each stuffed tofu into the batter, ensuring they are evenly coated.

  4. Fry the Tofu:
Heat oil in a deep frying pan over medium heat. Once the oil is hot, carefully place the coated tofu into the oil, frying them until they turn golden brown and crispy. Remove from oil and drain on paper towels to remove excess oil.

  5. Make the Sambal Petis:
In a blender, combine shrimp paste, sugar, salt, soy sauce, fried garlic, bird’s eye chili, and water. Blend until smooth. Transfer the mixture to a small saucepan and cook over low heat. Stir occasionally until the mixture starts bubbling. Slowly add the cornstarch mixture, stirring continuously until the sambal thickens to your desired consistency.

  6. Serve:
Arrange the crispy stuffed tofu on a serving platter and drizzle or serve alongside the sambal petis. Enjoy the spicy, savory flavors that make Tahu Isi Sayur Pedas a delightful dish for any occasion!
